This beef stroganoff recipe has it all. A good protein, a vegetable, and a flavorful but not overpowering sauce. Plus, it’s filling and there are usually leftovers! Awesome!

Homemade Beef Stroganoff with Ground Beef

Even though there’s a longer list of ingredients, this beef stroganoff recipe comes together in just THREE steps! A great meal for busy nights.

First, get a larger skillet for this one-pot main dish. I think mine is a 5-quart skillet. Then over medium heat brown your ground beef with your onion, salt, garlic powder, and carrots until the beef is no longer pink and the carrots are soft. Carrots are done when they are easily pierced with a fork. Do NOT drain the grease off!

Second, add in the beef broth, evaporated milk, mushrooms, and egg noodles to the skillet. Bring this all to a boil and then let it simmer for 7-9 minutes until the noodles are cooked and most of the liquid has evaporated off.

Third, Remove the skillet from the heat and stir in the sour cream until combined. Serve warm with a butter bread or roll, another warm vegetable, or your favorite side. Enjoy!

More Easy Pasta Dinner Options

Want another one-pot meal deal? This five cheese ziti recipe is for you! It’s all the creamy-cheese covered pasta you can handle in one dirty dish. As a copycat recipe of Olive Garden’s five cheese ziti, it is so flavorful that you will be soon adding it to your weeknight rotation.

Have some ground sausage to use up? Tender tortellini coated in a creamy blend of alfredo and spaghetti sauce, mixed with ground sausage, and topped with a blend of melted cheeses makes this sausage tortellini bake a winner! This is next-level yumminess!

Want a twist on tradition? This is traditional spaghetti with a hearty meat sauce piled high on top of crunchy garlic bread is spaghetti boats. Spaghetti boats are all your favorite parts of spaghetti night neatly stacked up so every bite is the cheese, noodles, meat sauce, and garlic bread. My kids CONSTANTLY beg for this meal!
