This Easy Egg Salad recipe combines chopped hard-boiled eggs with Miracle Whip, dijon mustard, paprika, salt, pepper, diced red onion, and carrots. It’s packed with flavorful, healthy ingredients for a tasty breakfast, quick lunch, and filling dinner or snack!

Egg salad is incredibly easy to make but you can eat it for any occasion! We love it over lightly buttered toast and lettuce for a hearty breakfast. It’s great in a wrap with garden lettuce or cucumber for a quick lunch. Kids enjoy scooping up this egg salad with classic butter crackers for a fun meal on the go. It’s great snacking with Triscuits! Egg salad is perfect for brunch occasions and summer potlucks, too! This is a meal idea that works on many levels.

Easy Egg Salad

Making Egg Salad is crazy easy. Chop your hard-boiled eggs, onions, carrots, and dill. Add splashes of paprika, salt, and pepper. Mix everything with Miracle Whip and Dijon mustard, and enjoy! The hardest part is deciding how to eat it!

Ingredients

  • 8 hard-boiled eggs, peeled and chopped
    • Hard boil the eggs over the stove, in the oven, or air fryer. We use one of these egg cookers and love it! It’s an excellent job for kids and helpers in the kitchen.
    • I will grate the eggs for little kids. This helps reduce any choking hazard and makes the food easier to eat and more appealing.
  • 1/4 cup tablespoon diced carrot
    • We enjoy the additional flavor, color, and crunch of carrots in egg salad, but they can be left out if desired.
  • 1/4 cup teaspoon diced red onion
    • This recipe is for onion lovers, so if you’re sensitive, consider reducing the amount of onion.
  • 1/2 cup Miracle whip
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill
  • a dash or two of sweet paprika
  • salt, to taste
  • pepper, to taste

Directions

First, combine and stir all ingredients in a medium bowl.

Then store in the refrigerator until ready to eat. Enjoy!

This is the best Egg Salad recipe! It's full of flavor, with fresh dill, Dijon mustard, and Miracle Whip, and texture, with diced red onion and carrots. It’s easy to make and can be enjoyed anytime: breakfast, lunch, or dinner!

Ingredients
  

  • 8 large hard-boiled eggs roughly chopped
  • ¼ cup red onion diced
  • ¼ cup carrot diced
  • 1 teasppon dill chopped
  • ½ cup Miracle Whip
  • 1 tablespoon Dijon Mustard
  • paprika a dash or two
  • salt to taste
  • pepper to taste
