Ingredients for Easy Santa Fe Soup
- 2 pounds of ground beef or turkey
- 1 medium onion, diced
- 2 ounces(2 packets) of dry Ranch Seasoning
- 2 ounces(2 packets) of dry taco seasoning
- We like to keep things mild here, but experiment with your choice of heat and enjoy even more flavor combinations!
- 1 cup of water
- 2- 15.25 ounce cans of white corn or shoepeg corn, undrained
- Shoepeg corn tends to bring more of a sweet flavor to the soup, rendering it even more yummy!
- 1- 10 ounce can diced tomatoes with chilies, undrained
- 2- 14.5 ounce cans of diced tomatoes, undrained
- 1- 15.5 ounce can of black beans, drain and rinse
- 1- 15.5 ounce can of kidney beans, drain and rinse
- 1- 16 ounce can of pinto beans, drain and rinse
- Garnishes: sour cream, shredded cheddar cheese, Chili Cheese Fritos, sliced avocado, lime

Slow Cooker Santa Fe Soup
First, in a large skillet on medium heat, brown the ground beef with the onion until no longer pink. Season with salt and pepper to taste. Drain off the excess grease.
Then add all ingredients to a 6-quart or larger slow cooker, stir well, and cook for 4 hours on low stirring occasionally.
Serve with a dollop of sour cream, a sprinkle of cheese, and Chili Cheese Fritos. Enjoy!
Stove Top Santa Fe Soup
First, brown the ground beef with the onion until no longer pink in a large stock pot on medium heat. Season with salt and pepper to taste. Drain off the grease.
Then, add the brown ground beef and all other ingredients to the stock pot. Stir. Bring to a boil and then cook on low for 1 hour. Continue stirring occasionally.
