One-Skillet Zucchini Meal

Ingredients for Skillet Zucchini

  • 1/4 cup butter
  • 8 cups zucchini, cubed or sliced
  • 1 large onion, sliced
  • 2-3 medium to large tomatoes, chunked
  • 6 slices of bacon, chopped
  • 1/4 cup water
  • 1/2 cup bread crumbs
  • 1 teaspoon soy sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste
The ingredients to Skillet Zucchini: Fresh zucchini, tomatoes, onions, shredded cheddar cheese, crumbled bacon, butter, soy sauce, bread crumbs, and grated parmesan cheese.

Directions

In a large 5-quart skillet, melt the butter over medium heat. Mix in the prepared zucchini, tomatoes, onions, and bacon. Season with salt and pepper and add in water. Stir. Cover and return to heat. Cook for 10 minutes, occasionally stirring, until vegetables are tender.

Storing Skillet Zucchini
