Egg and Bacon Spinach Salad

This salad combines the lightness of hard-boiled eggs and the richness of bacon bits styled over a bed of spinach. Add a sprinkle of croutons for crunch and drizzle on a tangy celery seed vinaigrette to finish off this sweet and savory salad.

Ingredients

Celery Seed Vinaigrette

  • cup sugar
  • 1 teaspoon celery seed
  • 3 teaspoon mustard
  • ½ cup vinegar
  • cup extra virgin olive oil
  • salt and pepper to taste

Salad

  • 6 ounce baby spinach
  • 4 eggs hard-boiled, peeled, sliced
  • 3 tablespoons bacon bits or up to half of 3.5oz package of babcon bits
  • 1 cup crutons

Instructions

  • Add the dressing ingredients in a small bowl and whisk to combine. Set aside.
  • In a large shallow pan(I used a 10in pie pan/serving platter), layer the spinach. You may have to pack it down a bit.
  • Add egg slices in any design and sprinkle bacon bits.
  • When you are ready to serve, add croutons and drizzle the vinaigrette. Serve immediatly. Enjoy!
