Ingredients
Celery Seed Vinaigrette
⅔cupsugar
1teaspoon celery seed
3teaspoonmustard
½cupvinegar
⅓cupextra virgin olive oil
salt and pepper to taste

6ouncebaby spinach
4 eggshard-boiled, peeled, sliced
3tablespoons bacon bitsor up to half of 3.5oz package of babcon bits
1cupcrutons
Instructions
Add the dressing ingredients in a small bowl and whisk to combine. Set aside.
In a large shallow pan(I used a 10in pie pan/serving platter), layer the spinach. You may have to pack it down a bit.
Add egg slices in any design and sprinkle bacon bits.
When you are ready to serve, add croutons and drizzle the vinaigrette. Serve immediatly. Enjoy!
