Ingredients
3cupsbaby spinachabout ¾ of a bag of baby spinach
6Roma tomatoessliced
2teaspoons dried basil leaves
2cupsshredded mozzeralla cheese
¼cupbalasmic vinegrette dressing
Instructions
Mix up your balsamic vinagrette. Set aside. I made mine from BarefeetInTheKicthen.com
Place spinach at the bottom of a quiche dish or 10 inch pie plate.
Slice tomatoes and arrange in a single layer on top of spinach.
Sprinkle dried basil evenly across and top with mozzeralla cheese.
OPTIONAL: Chill for an hour. Drizzle balsamic vinaigrette all over and Enjoy!
