Bacon Broccoli Pasta Salad

Ingredients

  • 4 cup fresh broccoli florets about 2 large heads, broken into tiny pieces
  • 8 ounces rotini pasta or tother short pasta
  • cup red onion diced
  • ½ cup dried cranberries
  • ¼ cup sunflower kernels
  • ½ pound bacon cooked, and crumbled, about 8 slices

Dressing

  • ¾ cup mayonnaise We love Miracle Whip for zip!
  • ¼ cup sour cream
  • 4 Tablespoons apple cider vinegar
  • 2 teaspoons sugar
  • salt and pepper to taste

Instructions

  • Boil water and cook the pasta according to package directions. Then drain and run under cold water to stop the cooking.
  • As the pasta is cooking, whisk the dressing ingredients together in a small bowl. Set aside and refrigerate until needed.
  • Add all remaining salad ingredients to a large bowl, and pour the prepared dressing on top. Mix well.
  • Refrigerate for an hour before serving so flavors blend. Add a spoonful of mayo if the salad is too dry. Pasta will absorb the dressing the longer it sits.
