4cupfresh broccoli floretsabout 2 large heads, broken into tiny pieces
8ouncesrotini pastaor tother short pasta
⅓cupred oniondiced
½cupdried cranberries
¼cupsunflower kernels
½poundbaconcooked, and crumbled, about 8 slices
Dressing
¾cupmayonnaise We love Miracle Whip for zip!
¼cupsour cream
4Tablespoonsapple cider vinegar
2teaspoonssugar
salt and pepper to taste
Instructions
Boil water and cook the pasta according to package directions. Then drain and run under cold water to stop the cooking.
As the pasta is cooking, whisk the dressing ingredients together in a small bowl. Set aside and refrigerate until needed.
Add all remaining salad ingredients to a large bowl, and pour the prepared dressing on top. Mix well.
Refrigerate for an hour before serving so flavors blend. Add a spoonful of mayo if the salad is too dry. Pasta will absorb the dressing the longer it sits.
