Buckeye Brownies from a Box Brownie Mix

Made from a box brownie mix, this Buckeye Brownies recipe is a layered dessert with fudgy brownies, peanut butter filling, and chocolate topping. These decadent brownies will wow co-workers and holiday guests alike!

Ingredients

  • 18.4 ounce box brownie mix, use any 9x13-in "family-size" brownie mix plus all box ingredients
  • 2 cups powdered sugar
  • ½ cup butter softened to room temperature
  • 1 cups peanut butter
  • 6 Tablespoons butter
  • 6 ounces semi-sweet chocolate chips

Instructions

  • In a 9x13-inch baking pan, make the brownies according to the box directions and let them cool completely.
  • Blend together the powdered sugar, softened 1/2 cup of butter, and peanut butter using an electric hand mixer or stand mixer. Then spread the peanut butter filling over the cooled brownies. Chill the brownies in the refrigerator for 1 hour.
  • Melt the 6T and chocolate chips together in the microwave or on the stovetop, watching carefully to prevent the chocolate from burning.
  • Spread the melted chocolate evenly over the peanut butter filling, and let it cool completely before cutting. Cool the brownies in the refrigerator for an hour to speed things up and help them set nicely. Enjoy!
