Creamy Hamburger Potato Soup

Creamy Hamburger and Potato Soup is a one-pot meal idea of hearty beef, tender vegetables, and a creamy beef broth base. It’s a thick and savory soup perfect for winter months!

Ingredients

  • 1 pound ground beef lean
  • 2 Tablespoons olive oil
  • 1 onion diced
  • 2 teaspoons minced garlic
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 2 Tablespoons flour
  • 5 cups russet potatoes peeled and cubed
  • 4 cups beef broth
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon paprika
  • 8 ounces cream cheese softened to room temperture and cubed
  • 1 cup shredded cheddar cheese garnish

Instructions

  • Heat olive oil in a large stock pot over medium heat. Then add the ground beef, onion, and garlic and cook the beef until the meat is no longer pink and browned. Constantly crumble the beef as it cooks.
  • Stir in the carrots and celery, and cook for 5 minutes.
  • Sprinkle the flour over the mixture, stirring to coat the vegetables and beef evenly. Then, pour the beef broth, potatoes, salt, pepper, and paprika. Mix to combine and bring the soup to a boil. Then, reduce the heat to a simmer for 20 minutes or until the potatoes are fork-tender.
  • Finally, gently stir the softened and cubed cream cheese until dissolved and heat through. Serve hot, garnished with shredded cheddar cheese.
