Ingredients
24ouncefrozen peas2- 12 ounce bags
1cup celerydiced
1cup cauliflowerchopped
¼cup green onion diced
1cupcashewschopped
Dressing
½cupsour cream
1cup ranch dressing
Garnishes- optional
bacon bits
1cup shredded cheddar cheese
Instructions
Thaw the peas in a colander under lukewarm water for a couple of minutes. Drain and let air dry while preparing the rest of the ingredients.
In a large mixing bowl, gently mix the peas, diced celery, chopped cauliflower, diced green onion, and chopped cashews. Then in a small mixing bowl, mix the sour cream and ranch dressing. Pour the dressing over the mixed vegetables and slowly mix until everything is coated.
Chill the pea salad with cashews in the refrigerator for a few hours to marry the flavors.
Stir once more before serving, then garnish with bacon bits and shredded cheddar cheese. Serve chilled and enjoy!
