Ingredients

  • 5 medium yellow potatoes
  • ½ yellow bell pepper orange or red, diced
  • handful of baby spinach chopped
  • A handful of cherry tomatoes halved
  • 1 Tablespoon avocado oil
  • salt to taste
  • pepper to taste
  • 3 eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 400°F. Lightly grease a 9-inch glass pie plate with cooking spray.
  • Cut the yellow potatoes into 1.5-inch pieces and put them in a pot. Fill the pot with water just until it covers the potatoes. Then boil the potatoes until fork-tender, about 10 minutes. Drain off the water.
  • Press the cooked potatoes into the bottom of the pie plate using the back of a spoon or cup. Then drizzle the oil on the potatoes and season with salt and pepper.
  • Drizzle the oil on the potatoes and season with salt and pepper.
  • Evenly layer the spinach, peppers, and tomatoes on top of the potatoes
  • In a medium mixing bowl, whisk the eggs and milk with a fork, add some salt and pepper, and then pour this mixture over the vegetables and potatoes. Top the quiche with shredded cheddar cheese.
  • Finally, bake the quiche at 400°F for 25-30 minutes. Serve it warm and enjoy!
