5medium yellow potatoes
½yellow bell pepperorange or red, diced
handful of baby spinachchopped
A handful of cherry tomatoeshalved

Instructions
Preheat the oven to 400°F. Lightly grease a 9-inch glass pie plate with cooking spray.
Cut the yellow potatoes into 1.5-inch pieces and put them in a pot. Fill the pot with water just until it covers the potatoes. Then boil the potatoes until fork-tender, about 10 minutes. Drain off the water.
Press the cooked potatoes into the bottom of the pie plate using the back of a spoon or cup. Then drizzle the oil on the potatoes and season with salt and pepper.
