Homemade Strawberry Freezer Jam

This easy homemade strawberry freezer jam recipe has only 4 ingredients using fresh strawberries, sugar, water, and Sure-Jell pectin. It takes about 30 minutes. There's no cooking down fruit and no water bath. This is the perfect jam recipe for beginners!

Ingredients

  • 2 cups strawberries, roughly 1Q whole berries cleaned and washed then mashed or blended
  • 4 cups sugar
  • ¾ cup water
  • 1.75 ounces Sure-Jell Orginal Fruit Pectin 1 package

Instructions

Prepare the Jars

  • Make sure all jars and lids are washed. Dry and set them aside.
    *Helpful Hint: Jars with straight sides are freezer safe. Jars with shoulders are not. Leave ample headspace. Make sure, when jars go into the freezer, to loosen the lids until the jam is completely frozen, then completely tighten the lids (about 24 hours later).

Prepare the Fruit

  • Wash and destem the strawberries. Then mash them with a potato masher until the desired consistency is reached. For a jelly-like jam, use a food processor or blender for a smoother result. This is how my kids prefer their jam(no weird chunks).
  • Mix the sugar and mashed strawberries in a large bowl until completely combined. Then let it sit for 10 minutes, stirring occasionally.

Prepare the Sure-Jell Pectin

  • In a small saucepan over high heat, bring the water and pectin to a boil. Then boil it for one minute.

Make and Set the Jam

  • Immediately, stir the pectin into the sugared fruit mixture until most of the sugar crystals have dissolved, about 3 minutes.
  • Pour the strawberry jam into the jar,s leaving 1/2-inch headspace. Clean the rims and put on the lids.
  • Set the jars on the counter at room temperature for 24 hours to set the jam. Transfer them to the freezer, placing them upright and with the lids loose until completely frozen. Once completely frozen, tighten lids.

Thawing the Jam

  • Thaw the frozen strawberry jam in the refrigerator overnight or on the counter for a couple of hours before using. This homemade strawberry freezer jam will last up to 3 weeks in the refrigerator or up to one year frozen.
  • Spread strawberry jam on bread, toast, biscuits, muffins, and more! It is amazing on our freshly baked peasant bread. It is light and fluffy with a crisp butter crust. Enjoy!

Hint: Number of jars you will need for our Homemade Strawberry Freezer Jam recipe: 12 4-ounce jars, 6 8-ounce jars, 3 1-pint jars. We use glass jars with straight sides and plastic lids.
