Lemon Poppy Seed Bread

This Lemon Poppy Seed Bread recipe leaves you with a refreshing and light lemon-flavored bread that's perfectly sweet. Plus it's a quick and easy option for a brunch date or extra lunch side.

Ingredients

Wet Ingridents

  • 3 eggs beaten
  • cups milk
  • ¾ cup oil
  • 2 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • cups sugar

Dry Ingredients

  • cups flour
  • 2 tablespoons poppy seeds
  • 1 tablespoon baking powder

Instructions

  • Combine the dry ingredients (flour, seeds, and baking powder) in a bowl and set aside.
  • In a sperate bowl, mix the wet ingridients (eggs, milk, oil, extracts, and sugar) together.
  • Gradually mix the dry ingredients into the wet ingredients. Do not overmix.
  • Pour into a greased and floured loaf pan. (I used TWO loaf pans for this recipe.)
  • Bake at 350°F for 50-60 minutes or until a toothpick comes out clean when inserted into the middle of the loaf. Enjoy!
