Baked Apple Cranberry Pecan Oatmeal

The taste of fresh apples and slightly tart dried cranberries blend seamlessly with the crunch of pecans and just sweet enough old fashion rolled oats is this baked apple cranberry pecan oatmeal recipe. This make-ahead breakfast dish lets you wake up mess-free to a warm, hardy breakfast. Perfect for any brunch or family breakfast!

Ingredients

Main Dish

  • 2 eggs
  • cups milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple pie spice
  • ¼ teaspoon salt
  • ½ cup brown sugar packed
  • 5 Tablespoons butter melted
  • 2 cups apples peeled and cubed small
  • 3 cups old fashion rolled oats
  • ½ cup pecans coarsly chopped
  • ½ cup dried cranberries

Topping

  • ½ cup pecans coarsely chopped
  • ¼ cup brown sugar packed
  • 3 Tablespoons butter melted

Garnish

  • ½ cup dried cranberries

Instructions

  • In a large bowl, whisk together your eggs, milk, vanilla, apple pie spice, salt, brown sugar, and melted butter for the main dish.
  • Then add into the large bowl two cups of apples peeled and cubed small, uncooked old fashion oats, coarsely chopped pecans, and dried cranberries. Stir to combine. Pour into a lightly greased(with cooking spray) 8-inch square baking dish. Cover this dish with plastic wrap and chill in the refrigerator for at least 8 hours or overnight.
  • Now make the topping. In a medium bowl combine brown sugar, coarsely chopped pecans, and melted butter. Cover this dish with plastic wrap and chill in the refrigerator for at least 8 hours or overnight.
    Save the remaining 1/2 cup of dried cranberries as a garnish for the next morning when you are done baking.
  • When the dishes have completely chilled or the next morning, uncover both dishes. Stir the baking dish of apples and oats to redistribute the wet ingredients and then sprinkle the topping evenly across the dish.
  • Bake the oatmeal for 35 minutes at 350 degrees Fahrenheit or until the dish has set in the middle and the top is a golden brown. Once removed from the oven garnish the baked oatmeal by sprinkling the remaining dried cranberries on top. Allow to cool for about 10 minutes and serve warm.
