Baked Apple Cranberry Pecan Oatmeal

This make-ahead breakfast dish lets you wake up mess-free to a warm, hardy breakfast. Perfect for any brunch or family breakfast!

I was pleasantly surprised when I first tried this baked oatmeal as I am not a huge fan of dried cranberries but one would never guess how amazing apples, dried cranberries, and pecans paired well together. The dried cranberries are not overwhelming and the apples are perfectly tender. Bake them all together and you have this amazingly just sweet enough warm breakfast dish full of textures and flavors. Our whole family enjoys this breakfast treat!

How to make Baked Oatmeal

First, gather your ingredients. Peel and cube your apples. I would suggest using firm and sweet apples that when baked keep their texture like Honeycrisp and Fuji apples. Then melt your butter.

Next, In a large bowl, whisk together your eggs, milk, vanilla, apple pie spice, salt, brown sugar, and melted butter.

Then add into the large bowl your two cups of apples that have been peeled and cubed small, uncooked old fashion oats, coarsely chopped pecans, and dried cranberries. Stir to combine. Pour into a lightly greased(with cooking spray) 8-inch square baking dish. Cover this dish with plastic wrap and chill in the refrigerator for at least 8 hours or overnight.

Now make the topping. In a medium bowl combine 1/4 cup brown sugar, 1/2 cup coarsely chopped pecans, and 3 tablespoons melted butter. Cover this dish with plastic wrap and chill in the refrigerator for at least 8 hours or overnight.

Save the remaining 1/2 cup of dried cranberries as a garnish for the next morning when you are done baking.

When the dishes have completely chilled or the next morning, uncover both dishes. Stir the baking dish of apples and oats to redistribute the wet ingredients and then sprinkle the topping evenly across.

Bake the oatmeal for 35 minutes at 350 degrees Fahrenheit or until the dish has set in the middle and the top is a golden brown. Once removed from the oven garnish the baked oatmeal by sprinkling the remaining dried cranberries on top. Allow to cool for about 10 minutes and serve warm. The results; warm and beautiful baked apple cranberry pecan oatmeal for breakfast!
