Broccoli Cheese Rice Casserole

This broccoli cheese rice casserole has it all as a filling hot vegetable. Broccoli, cheese, and rice all slow-cooked together in a crockpot to make the best melt-in-your-mouth casserole ever! Yummy!

Ingredients

  • cups minute rice
  • 1 cup water
  • ½ teaspoon salt
  • ¼ cup butter
  • ¼ cup onion chopped
  • ¼ cup celery chopped
  • 10¾ ounces cream of celery soup 1 can
  • 10¾ ounces cream of mushroom soup 1 can
  • 1 bag frozen broccoli florets 10-12 ounces
  • 1 cup Velveeta cheese or other processed American cheese

Instructions

  • Lightly spray your crockpot with cooking spray or line it with a crocpot liner. Add all ingridents, mix and cook for 3-4 hours on high or 5-6 hours on low. Stir occasionally. Enjoy!

Notes

Triple this recipe for a large party. I double it for my family of seven and have leftovers. Yum!
