Cottage Cheese Marinara Pasta

Ingredients

  • 16 ounces pasta of choice
  • 1 cup cottage cheese whole milk
  • 1 cup marinara or spaghetti sauce
  • 1 cup reserved pasta water
  • ½ cup shredded parmesan cheese
  • 2 tablespoons butter
  • teaspoon or pinch red pepper flakes
  • optional more red pepper flakes, shredded parmesan cheese or parsley for garnish

Instructions

  • Boil heavily salted water and cook the pasta according to the package directions. Then reserve 1 cup of the pasta water. Drain pasta and return to the pot, cover.
  • Cream together until smooth the cottage cheese, marinara sauce, pasta water, shredded parmesan cheese, butter, and crushed red pepper flakes in a blender for 1-2 minutes.
  • Pour the prepared sauce over the cooked pasta in the pot and stir until all pasta is evenly coated. Garnish with more red pepper flakes, shredded parmesan cheese, or a little chopped parsley. Serve warm. Enjoy!
