Cowboy Caviar

This Cowboy Caviar party chip dip is fresh and flavorful, full of vegetables, beans, and an easy homemade dressing. It's a super popular tortilla dip perfect for the holidays, camping, and potlucks!

Ingredients

  • 1 pound Roma tomatoes seeded, diced
  • 1 red onion diced
  • ½ cup red pepper diced
  • ½ green pepper diced
  • 11 ounce canned sweet corn drained
  • 15 ounce canned black beans drained and rinsed
  • 15 ounce canned blackeyed peas drained and rinsed
  • 1 cup cilantro chopped

Easy Cowboy Caviar Dresssing

  • ½ cup extra virgin olive oil
  • cup sugar
  • cup red or white wine vinegar
  • 1 teapsoon salt
  • 1 teaspoon chili powder

Instructions

  • First, prep the vegetables, and rinse and drain the beans.
  • In a large bowl, whisk the olive oil, sugar, white or red wine vinegar, chili powder, and salt until well combined.
  • Add in the tomatoes, peppers, red onion, corn, and beans. Gently mix to combine. Then add the cilantro and toss.
  • Cover and refrigerate for at least 1 hour, or overnight, prior to serving so the flavors can blend. Serve with tortilla chips. Enjoy!
