Ingredients
1poundRoma tomatoesseeded, diced
1red oniondiced
½cupred pepperdiced
½green pepperdiced
11ouncecanned sweet corndrained
15ouncecanned black beansdrained and rinsed
15ouncecanned blackeyed peasdrained and rinsed
1cupcilantro chopped
Easy Cowboy Caviar Dresssing
½cupextra virgin olive oil
⅓cupsugar
⅓cupred or white wine vinegar
1teapsoonsalt
1teaspoonchili powder
Instructions
First, prep the vegetables, and rinse and drain the beans.
In a large bowl, whisk the olive oil, sugar, white or red wine vinegar, chili powder, and salt until well combined.
Add in the tomatoes, peppers, red onion, corn, and beans. Gently mix to combine. Then add the cilantro and toss.
Cover and refrigerate for at least 1 hour, or overnight, prior to serving so the flavors can blend. Serve with tortilla chips. Enjoy!
