Cowboy caviar is a fresh, no-bake chip dip that is perfect for holiday parties and family get-togethers. My sisters-in-law were always the ones to bring it to our holiday parties. It’s a great, guilt-free, gluten-free snack that’s perfect for dipping with tortilla chips or eating with a spoon.

Cowboy caviar is the perfect make-ahead chip dip because the flavors benefit from time to marinate and blend. It tastes great when prepared the day before any event, making it an excellent choice for busy holidays, camping trips, and graduation parties. This way, you won’t have to worry about it on the day of the celebration, which is incredibly convenient and nice!

How to make the Best Cowboy Caviar

The secret to a great cowboy caviar is being patient, keeping to a small dice and chop. Being able to fit all the flavors onto one tortilla chip makes for the perfect bite, and that starts with finely dicing! This is great way to pratice your knife skills or you can ‘cheat’ and use a vegetable chopper.

Ingredients for Cowboy Caviar

  • 1 pound Roma tomatoes, seeded and diced
  • 1 red onion, diced
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 11-ounce can of sweet corn, drained
  • 15-ounce can of black beans, drained and rinsed
  • 15-ounce can of black-eyed peas, drained and rinsed
  • 1 cup fresh cilantro, chopped

Dressing Ingredients for Cowboy Caviar

  • 1/2 cup olive oil
  • 1/3 cup sugar
  • 1/3 cup red or white wine vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon salt

Instructions for Cowboy Caviar

First, prep the vegetables, and rinse and drain the beans.

Then, in a large bowl, whisk the olive oil, sugar, white or red wine vinegar, chili powder, and salt until well combined.

Add in the tomatoes, peppers, red onion, corn, and beans. Gently mix to combine. Then add the cilantro and toss.

Finally, cover and refrigerate for at least 1 hour, or overnight, prior to serving so the flavors can blend. Serve with tortilla chips. Enjoy!

Storing Cowboy Caviar

Store Cowboy Caviar in an airtight container in the refrigerator for up to 5 days. The flavors will become more pronounced the longer it sits. The best thing about Cowboy Caviar is that it gets better with age!
