The secret to a great cowboy caviar is being patient, keeping to a small dice and chop. Ingredients for Cowboy Caviar
- 1 pound Roma tomatoes, seeded and diced
- 1 red onion, diced
- 1/2 cup red pepper, diced
- 1/2 cup green pepper, diced
- 11-ounce can of sweet corn, drained
- 15-ounce can of black beans, drained and rinsed
- 15-ounce can of black-eyed peas, drained and rinsed
- 1 cup fresh cilantro, chopped

Dressing Ingredients for Cowboy Caviar
- 1/2 cup olive oil
- 1/3 cup sugar
- 1/3 cup red or white wine vinegar
- 1 teaspoon chili powder
- 1 teaspoon salt

Instructions for Cowboy Caviar
First, prep the vegetables, and rinse and drain the beans.
Then, in a large bowl, whisk the olive oil, sugar, white or red wine vinegar, chili powder, and salt until well combined.


Add in the tomatoes, peppers, red onion, corn, and beans. Gently mix to combine. Then add the cilantro and toss.



Finally, cover and refrigerate for at least 1 hour, or overnight, prior to serving so the flavors can blend. Serve with tortilla chips. Enjoy!
