This Easy Buffalo Chicken Salad recipe is made up of crisp romaine lettuce, chicken bites, cherry tomatoes, frozen peas, shredded cheddar cheese, and croutons, all covered in a simple buffalo dressing of Ranch and Buffalo Wild Wings Medium wing sauce. It’s a quick salad that’s full of fresh vegetables and protein that satisfies.

Our family LOVES this buffalo chicken salad recipe. There are times when I think my kids would live off of it or its variations. We make it for quick homeschooling lunches, to use up leftover veggies, and for a fresh yet filling supper in the warmer months. Buffalo Chicken Salad is a great main dish that we are currently enjoying with a side of homemade cottage cheese bread (so good and fluffy) and this amazing strawberry freezer jam (the perfect jam recipe for beginners!).

Whomever ever said eating healthy was boring has never tried a good salad. This is a homemade chicken salad that tastes just like one you order from a restaurant, but better! It has a wide variety of textures and flavors that keep it fun. The crisp lettuce, warm chicken, frozen peas, and buffalo Ranch dressing balance each other perfectly, from cool and crisp to just the right amount of heat. Plus, customizing this salad is so easy and encouraged!

How to make a Buffalo Chicken Salad at Home

Salads are a fantastic way to incorporate your favorite flavors into one great dish. Do not be afraid to try something different and experience new flavor combinations! This is such a simple family meal idea and kids love to build their own salad. You will not regret it!

Ingredients for an Easy Chicken Salad

  • lettuce, romaine or iceberg, washed and cut
    • Romaine and Iceberg lettuce are perfect for this salad. They are crisp and neutral in taste.
  • Kirkland Chicken Breast Chunks, baked and warm
    • Chicken bites are the protein. These Kirkland Chicken Breast Chunks are a family favorite! They are just the right size and have good flavor. You can use your favorite chicken chunks. If you are trying to stay on the healthy side, try Bare Chicken Chunks.
  • cherry tomatoes, sliced in half
    • Cherry tomatoes for sweetness and color.
  • frozen peas
    • Frozen peas are a great cold contrast to the heat of the buffalo dressing.
  • shredded cheddar cheese
    • Shredded cheddar cheese tames the buffalo sauce and makes the salad feel creamy.
  • croutons
    • Crouton adds texture and some crunch.
    • For a gluten-free alternative to croutons, try sunflower seeds, pumpkin seeds, or walnuts.
  • Ranch dressing
  • Medium Wing Sauce, or another favorite buffalo sauce like Frank’s Red Hot

Extra Chicken Salad Add-ins

  • edamame, frozen or roasted
  • hard-boiled eggs
  • red onion, finely diced
  • fresh cucumber, sliced into half moons
  • sunflower seeds
  • walnuts, pecans, or sliced almonds

Instructions for an Easy Buffalo Chicken Salad

Prepare all the ingredients. Bake the chicken in the oven according to the package directions.

In a small mixing bowl, add about 2 Tablespoons of Ranch to 2 teaspoons of buffalo sauce and whisk to combine (this is for a single serving). If sensitive to heat, add the buffalo sauce to the Ranch in 1/2 teaspoon increments, tasting periodically.

The ingredients to the simple buffalo dressing in this chicken salad: Medium wing sauce and Ranch dressing on the counter.

Then, in single-serving bowls, pasta bowls, or a salad bowl, assemble the salad by combining all ingredients in your preferred proportions. Drizzle the dressing on and enjoy!
