Made with pantry staples, this Cottage Cheese Bread recipe makes some of the fluffiest bread around! It is easy to make and a delight to enjoy on sandwiches, with soups, and topped with jams!

Yum! I have been on a cottage cheese kick. Now, I didn’t grow up with cottage cheese, so I wasn’t too sure of it as a young adult. I mean, really, lumpy but runny, and we call it cheese. One can understand my suspicion! Well, after being told to add it to scrambled eggs (game-changer!) and in other scrumptious recipes like this Cottage Cheese Marinara Pasta, I am a believer that most things will be better with cottage cheese. It adds an airy texture with a sweet yet tangy taste. So, I asked: Can I add cottage cheese to bread? YES! And it’s delicious, melt-in-your-mouth bread!

This Cottage Cheese Bread has made a lasting impression on my kids. One has stated, “It’s like store-bought white bread but better!”

How to Make Cottage Cheese Bread

A little bit of time, some dreaming, and this beautiful bread made with cottage cheese came to be. This easy bread recipe is to the point and is made with pantry staples. Don’t overthink it and trust the process!

Ingredients for Cottage Cheese Bread

If you have ever made bread, these ingredients for cottage cheese bread will be super familiar. And that’s the best thing about bread making, you get to experience wonderful breads with basically the same ingredients and slightly different techniques. No boring bread here!

  • 1 1/2 cups warm water, 110-115°F
  • 1/4 cup sugar
  • 4 1/2 teaspoons active dry yeast, 2- 1/4 ounce packets
  • 1/4 cup oil, I use avocado oil
  • 2 teaspoons salt
  • 2 eggs, at room temperature
  • 1 1/2 cups cottage cheese, at room temperature, and mashed or blended to break down the curds
  • 5 1/2 cups flour
  • butter, for greasing the pans

I use these non-toxic stainless steel bread pans from Amazon.

Instructions for an Easy Cottage Cheese Bread

First, in a large mixing bowl, slightly dissolve the yeast and sugar in the warm water. Then let it sit for 5 minutes to let the yeast activate.

Next, add the oil, salt, eggs, cottage cheese, and flour to the active yeast in the large bowl and thoroughly mix to combine the ingredients. The dough will be thick yet sticky. Roughly knead the dough in the bowl for 4 minutes.

Then, grease a large bowl with cooking spray and transfer the dough into the bowl. Make sure all sides of the dough are greased. (This will help release the dough, once it has risen.) Cover the dough with a light towel and place it in a warm spot to rise for 40 minutes. (I use the Bread Proof button on my oven.)

Now butter the bottom and sides of a 9×5-inch bread pan. After 40 minutes, punch down the dough, divide it in half, knead it a couple of times, and shape it into a loaf. Then place one half into each greased bread pan.

Let the dough rise for the second time: 40 minutes in a warm place.

With ten minutes remaining in the second rise, preheat your oven to 350°F. Bake the cottage cheese bread in the oven for 40 minutes. Check it around 30 minutes. If the top is getting too brown, lay a piece of foil over the top for the remainder of the bake time. Don’t tighten the foil around the bread.

Once baked, let the bread cool in the pans for 10 minutes. Then cool the bread on a wire rack, either on its side or top. Slice the bread and enjoy!
