This Easy Overnight Monkey Bread recipe is made from frozen bread dough pieces, covered in cinnamon and brown sugar, and drizzled in maple syrup and butter for a light and fluffy monkey bread that’s the perfect sweet treat for any breakfast and brunch!

What’s not to love about perfectly-baked fresh bread dough pieces covered in cinnamon sugar, maple syrup, and butter? Monkey bread is a great breakfast for kids and adults. Savor it with some milk or coffee. Then pair it with protein side like eggs, bacon, or smoky links and have a breakfast of champions.

This delicious monkey bread has treated me so well and it’s one of our go-to recipes for breakfast and brunch. It’s such a treat in our house that I have also made it as an after-school or pre-game snack multiple times. It’s an easy fun treat that looks amazing and is always gone quickly!

Plus, can we talk about how awesome frozen bread dough can be?!? I mean, you can make bread super easy and at the drop of a hat, which is perfect for sandwiches and winter soups. Then you can make bread sticks and pizza crusts. And now monkey bread from frozen bread dough! Woot, woot! It’s so versatile and you get them in bags of FIVE! Just keep them frozen until needed. Then make all kinds of easy dishes from frozen bread dough! (Off soap box… continue with your day.)

Monkey Bread from Frozen Bread Dough

Overnight monkey bread is an easy treat to make and bake. Slightly thaw and assemble the dish, then let rise(overnight or until bubbly) and bake! Results: Amazing light and fluffy monkey bread covered in chopped pecans and a cinnamon sugar glaze! Yum!

Ingredients

  • 1 loaf of frozen bread dough(slightly thawed and cut into 48-64 pieces)
  • 3/4 cup brown sugar
  • 1/2 cup melted butter
  • 2 teaspoons cinnamon
  • 1/2 cup maple syrup
  • 1/2 cup chopped pecans(optional)

Directions for Easy Overnight Monkey Bread

First, remove the frozen bread from the freezer and let it thaw for at least 45 minutes. Then cut it into 48-64 little pieces. (They do not have to be even pieces.)

Then grease a bundt pan with cooking spray and spread out the chopped pecans on the bottom.

Next, mix up the brown sugar and cinnamon in a medium bowl. Then take the cut-up bread pieces, roll them in the cinnamon sugar mixture, and place them evenly in the bundt pan on top of the chopped pecans. Pour the remaining cinnamon sugar on top of the bread dough.

In a small bowl mix together the melted butter and maple syrup. Drizzle it in a circle over the bread dough making sure to get the sides of the pan covered.

Let the monkey bread rise overnight. (You can rise the monkey bread in a 100°F oven or on bread proof for around 4 hours.) Then, in the morning, bake the overnight monkey bread at 350°F for 30 minutes. Once baked, invert(or flip) the bread out of the bundt pan into a larger pie pan or serving tray. Serve immediately and warm! Enjoy!

Tips for making Monkey Bread made from Bread Dough

Cook the monkey bread for the full 30 minutes. While the top will be a rich golden brown, the bottom is still baking, so don’t pull your monkey bread from the oven too soon, or you will have undercooked bread dough.

If you want to prevent browning the top of the bread too much, lay a piece of foil on top. It will slow the browning of the bread while letting the pieces on the bottom cook through.

Chopped pecans are optional. You can switch it out with chopped almonds or walnuts.

Storing Monkey Bread

While it’s best fresh, monkey bread can be stored for up to 3 days in an airtight container. Simply microwave it for 10-20 seconds before eating to re-warm up the glaze.
