First, make your vinaigrette. Whisk together sugar, celery seed, mustard, vinegar, and extra virgin olive oil. Then add the salt and pepper to taste and whisk again. I prefer just a dash of each. Now set the celery seed vinaigrette aside.

Once you gather together the egg, bacon bits, spinach, and croutons, you can start to style your salad. Start with the spinach and arrange it in your dish. Make sure you pick out any older pieces or wilted spinach. I like to use a 10-inch pie plate for parties and gatherings but if you plan to just eat this at home over the next few days, a Tupperware dish that has a lid works great too.
Next, I slice my hard-boiled eggs and arrange them in a pattern of sorts. There’s no wrong way of doing this. You could dice the eggs and sprinkle them as well. Then sprinkle the bacon bits evenly all over.
Lastly, I add the croutons and drizzle the dressing to the egg and bacon spinach salad. I tend to wait to add croutons and dressing right before serving. And, depending upon the crowd, I will let my dinner guests add their own croutons and dressing. Make sure to shake or whisk the dressing right before drizzling it on the salad. I store my celery seed vinaigrette in a pint-size glass jelly jar making it super simple to quickly shake and pour. Serve and enjoy!

Egg and Bacon Spinach Salad
Ingredients
Celery Seed Vinaigrette
- ⅔ cup sugar
- 1 teaspoon celery seed
- 3 teaspoon mustard
- ½ cup vinegar
- ⅓ cup extra virgin olive oil
- salt and pepper to taste
Salad
- 6 ounce baby spinach
- 4 eggs hard-boiled, peeled, sliced
- 3 tablespoons bacon bits or up to half of 3.5oz package of babcon bits
- 1 cup crutons
Instructions
- Add the dressing ingredients in a small bowl and whisk to combine. Set aside.
- In a large shallow pan(I used a 10in pie pan/serving platter), layer the spinach. You may have to pack it down a bit.
- Add egg slices in any design and sprinkle bacon bits.
- When you are ready to serve, add croutons and drizzle the vinaigrette. Serve immediatly. Enjoy!
