Made with chicken chunks, crisp lettuce, veggies, cheese, and a simple buffalo dressing, this Easy Buffalo Chicken Salad is a simple and quick way to enjoy salad!

Ingredients

  • Romaine or Iceberg lettuce washed, and chopped
  • chicken chunks baked
  • cherry tomatoes sliced in half
  • frozen peas
  • shredded cheddar cheese
  • croutons
  • 2 Tablespoons Ranch dressing for single serving
  • 2 teaspoons medium wing sauce, Buffalo Wild Wings for single serving

Other Add-ins

  • Edamame frozen or roasted
  • red onion finely diced
  • hard-boiled eggs sliced
  • fresh cucumbers sliced into half moons
  • sunflower seeds
  • walnuts, peacans, sliced almonds

Instructions

  • Prepare all the ingredients. Bake the chicken in the oven according to the package directions.
  • In a small mixing bowl, add about 2 Tablespoons of Ranch to 2 teaspoons of buffalo sauce and whisk to combine (this is for a single serving). If sensitive to heat, add the buffalo sauce to the Ranch in 1/2 teaspoon increments, tasting periodically.
  • In single-serving bowls, pasta bowls, or a salad bowl, assemble the salad by combining all ingredients in your preferred proportions. Drizzle the dressing on and enjoy!
