Creamy Homemade Mashed Potatoes

Thick and creamy homemade mashed potatoes that are made with sour cream and cream cheese make the perfect side dish. Make them loaded by topping them with bacon bits, green onions, and cheese and you will be asking for seconds too.

Ingredients

  • 4 pounds potatoes peeled and cubed
  • 8 ounce cream cheese softened and cubed
  • 8 ounce sour cream
  • ½ cup butter (1 stick) softened and cubed
  • teaspoon salt
  • ½ teaspoon pepper

Optional Toppings for loaded mashed potatoes

  • ¼ cup green onions chopped
  • 3 ounce bacon bits
  • ½ cup shredded cheddar cheese

Instructions

  • Put peeled and cubed potatoes in a large stockpot with enough water to just to cover the potatoes and bring them to a boil over medium heat. Then let them simmer until tender or easily broken with a fork.
  • Drain and return to pot. Add the cream cheese, sour cream, butter, salt, and pepper. Using a potato masher, mash the potatoes until smooth and everything is combined.
  • Serve loaded with the bacon bits, green onions, and shredded cheese or your favorite toppings! Enjoy!!
