How to make Homemade Mashed Potatoes
Start by peeling about four pounds of potatoes. Sometimes I will peel all of the potatoes and sometimes I just wash and cut out any bad spots. This is totally a preference for most people. Leaving the skin is less work but gives it a more rustic look and taste. Peeling the potatoes completely will give a clean look and taste.
Cooking Potatoes to be Mashed
Next, you will cube the potatoes and rinse them well to remove any dirt. Realize that the smaller the cube the faster they will cook. I like to think in 1.5 inches by 1.5-inch cubes work well. Then place the potatoes in a large stockpot and fill it with water just until the potatoes are covered with water.
Now we will bring the water to a boil over medium heat. I do not stir these. Once boiling, turn down the heat to a simmer. Simmer the potatoes until they are tender and easily broken apart with a fork. This will be about 10-15 minutes.
Mashing Potatoes
The next step is to drain the potatoes, add the cream cheese, sour cream, and butter, and start mashing. Using softened and room temperature cream cheese, sour cream, and butter works best! Then I mashed these by hand using a potato masher. It’s really easy and you can control what kind of mashed potatoes you want. Sometimes I find myself wanting finely mashed, mashed potatoes that are super smooth, and other times I prefer chunky mashed potatoes that tend to go well with hearty sides. Either way, you can’t go wrong. Add salt and pepper to taste and mix to combine.

Creamy Homemade Mashed Potatoes
Ingredients
- 4 pounds potatoes peeled and cubed
- 8 ounce cream cheese softened and cubed
- 8 ounce sour cream
- ½ cup butter (1 stick) softened and cubed
- 1½ teaspoon salt
- ½ teaspoon pepper

Instructions
- Put peeled and cubed potatoes in a large stockpot with enough water to just to cover the potatoes and bring them to a boil over medium heat. Then let them simmer until tender or easily broken with a fork.
- Drain and return to pot. Add the cream cheese, sour cream, butter, salt, and pepper. Using a potato masher, mash the potatoes until smooth and everything is combined.
