This Loaded Baked Potato Slices recipe makes a savory potato slice that is tender in the middle, slightly crispy on the outside, and topped with melty cheddar cheese, bacon bits, and green onions. As a savory single-serving bit, these potato slices are perfect as an easy side or delicious appetizer that everyone can enjoy!

After watching my neighbor make these as a quick side to her busy weeknight suppers many times, I finally remembered to make up a batch and we have never looked back. Tender and baked in butter no one complains about having potatoes for supper. They actually beg to help add the toppings. Now everyone can have their own personal loaded baked potato with every bite!

How to make Easy Potato Slices in the Oven

This easy loaded baked potato slices recipe transforms boring potatoes into delicious discs of goodness in just 25 minutes!

Ingredients

  • Three medium to large Russet potatoes
    • Washed and sliced in 1/4 inch slices.
  • 4 tablespoons of melted butter
  • salt

For Garnish:

  • 1 1/2 cups shredded cheddar cheese
  • 3/4 cup of bacon bits
  • 1/4 cup of chopped green onion

Directions

First, line a 10×15-inch baking sheet with sides with foil and drizzle on the melted butter. Then cover each side of the potato slices in the butter and place them tightly side by side one at a time. Try to make sure that one side is completely touching the bottom of the pan. Sprinkle the potato slices with salt.

Next, bake the potato slices at 400 degrees Fahrenheit for 20-25 minutes until the potatoes are tender and the sides are browning. Hint: If the thickest potato slice is easily pierced with a fork, they are done!

Remove the slices from the oven and garnish them with the cheese and bacon bits. Place the baking sheet back in the oven for a few minutes(1-3 minutes) just until the cheese has melted, and then remove it again and garnish with the green onions. Cool for a minute and serve warm!
