This is a family favorite soup recipe! Seriously everyone enjoys its hearty flavors and creamy broth. Plus a soup top with bacon bits and cheese. Everyone loves bacon and cheese! I also love that this homemade soup is a one-pot meal idea ready in less than 30 minutes. Who can’t get behind that?

How to make a Creamy Potato Soup with Carrots

First, prepare your ingredients. You will need to chop your onion, and peel and cut your carrots and potatoes. Cut up your potatoes into 1/2-inch cubes and keep your carrots 1/4-thick for the best consistent cooking. You want the potatoes and carrots to be done boiling at the same time. Nothing is worse than eating a hard raw potato!

Next, in a medium stockpot, boil the chicken broth, potatoes, carrots, onion, salt, and pepper until the potatoes and carrots are cooked and easily pierced with a fork. The cook time is about 10-15 minutes depending on the boil. I personally love to get a good rolling boil going and tackle another quick task while making this potato soup. Just check back periodically on the tenderness of the vegetables and give the soup a quick stir.

Lastly, whisk the flour into the cold milk and then stir that into the soup. Add the butter and softened cream cheese to the soup gently stirring until the cream cheese completely dissolves.

Once the cream cheese is incorporated, serve and garnish this cream cheese potato soup with a sprinkle of shredded cheddar cheese, bacon bits, and chopped green onions.

Tips for the Perfect Potato Soup with Cream Cheese

While you can’t go wrong with this easy potato soup recipe, here are some tips I have learned over the years.

  • You can use any kind of potato for this soup but russet potatoes are preferred. They are hearty potatoes that do well boiled. Russet potatoes are flaky when done making this soup seem like a yummy loaded baked potato soup.
  • You dont have to whisk the milk and flour together but then the soup might be chuncky and less thick.
  • I use baby carrots and dont always peel my potatoes. This saves me tons of time!

Ingredients
  

  • 3 cups chicken broth
  • 2½ cups Russet potatoes peeled and cubed ½ cubes
