This white chicken chili recipe will always have a place in our meal rotation. It’s all the spice and flavor of chili but with a twist of shredded chicken in a savory but delicious creamy broth.

This recipe is a soup crockpot meal idea that will make your life easier! I promise! You can start with raw chicken, dump the rest of the ingredients in, easily shred the chicken once cooked, and stir the cream cheese in at the end. That’s it! And I love that this recipe feeds our family for 2 plus meals! Win!

How to make Crockpot White Chicken Chili

Since easy meal ideas are a must for busy stages of life, crockpots are lifesavers and the best thing about this recipe is that it is basically a dump and go kind of meal. Plus, add a crockpot liner for easy clean-up, and look forward to a nice relaxing night!

  1. In a 6 quart or larger crockpot/slow cooker, add all ingredients but the cream cheese and garnishes: the chicken breast, Great Northern beans, corn(drained), Rotel, water, bouillon cubes, onion, and spices to your crockpot. I repeat: do not add cream cheese!
    • You can subsitute out the water and bouillon cubes for 3 cups of chicken broth.
    • We use a mild Rotel to keep the spice and kick at a level that the kids enjoy. However, if you enjoy more spice maybe add the medium or hot Rotel instead.
    • Want a thicker white chicken chili? Try blending half the beans before adding them to the soup. If you dont have a immersion blender, try doing two batches in your normal blender for best results. This is also a great way to fool the non-bean lovers.
  2. Cook this on high for 3-4 hours or low for 6-8.
  3. When your chicken is done(internal temperture being 165 degrees Fahrenheit), remove chicken and shred it using a fork. Replace it back into the crockpot.
    • I often cheat and shred the chicken with a hand held mixer too. So easy and fast!
  4. Cut cream cheese into smaller cubes, add it to the soup, and stir it until it dissolves into the broth.
  5. Garnish with your favortie tops and serve!
    • Garnishes are unlimited! Simple corn chips for some salty crunch. Sour cream and mild shredded cheddar cheese are a safe bet. Or go spicy and do sliced jalapenos.

Ingredients
  

  • 3 large chicken breast trimmed of fat
  • 30 ounces Great Northern beans 2- 15 ounce cans
  • 10 ounces Rotel
  • 1 can corn drained
  • 3 chicken bouillon cubes
  • 3 cups water
  • 1 cup yellow onion diced
  • ¼ teaspoon pepper
  • 1 teaspoon salt
  • 1¼ teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • 8 ounces cream cheese 1 block, softened and cubed

Instructions
 

  • In a 6 quart or larger crockpot/slow cooker, add all ingredients but the cream cheese and garnishes: the chicken breast, Great Northern beans, corn(drained), Rotel, water, bouillon cubes, onion, and spices to your crockpot. Repeat: do not add cream cheese!
  • Cook this on high for 3-4 hours or low for 6-8.
  • When your chicken is done, remove the chicken and shred it. Replace back to crockpot.
  • Cut the cream cheese into smaller cubes, add it to the soup, and stir it until it dissolves into the broth.
  • Garnish with your favorite toppings and serve! We like corn chips, a dollop of sour cream, fresh green onion, shredded cheddar cheese, or sliced jalapenos.
