Easy Chicken Quesadillas with Homemade Sauce

Made with a simple sauce of sour cream, taco seasoning, hot sauce, and garlic salt, this Easy Chicken Quesadilla recipe features tender chicken, melted cheddar cheese, and tangy homemade quesadilla sauce sandwiched in a crispy gold brown quesadilla. It's a quick and filling simple lunch idea!

Ingredients

  • 16 ounces sour cream
  • 1 teaspoon taco seasoning
  • ½ teaspoon garlic salt
  • 4 teaspoons hot sauce We like Frank's RedHot Original
  • ½ cup cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 2-4 tortillas We use extra large tortillas, any size works.

Instructions

  • Make the homemade sauce:
    Mix the sour cream, taco seasoning, garlic salt, and hot sauce until completely combined. Taste the sauce and add more taco seasoning/hot sauce to taste.
  • Spread a generous amount of sauce on half of a flour tortilla. Then, add a sprinkling of cooked shredded chicken and cheddar cheese on top and fold the tortilla in half.
  • In a large skillet or on a hot griddle, cook the quesadilla until heated through, the cheese is melted, and it's browning. Slice and serve with extra dipping sauce on the side.
