Easy Cinnamon Sugar Granola

Ingredients

  • 3 cups oats old-fashion rolled or quick
  • ½ cup chopped nuts pecan, cashews, almond, or walnut
  • ¼ cup brown sugar packed
  • ½ teaspoon ground cinnamon
  • ½ teaspoon coarse sea salt
  • cup oil olive, avocado, or coconut
  • cup honey
  • 2 Tablepsoons vanilla extract

Optional

  • vanilla yogurt
  • strawberries and blueberries washed and cut

Instructions

  • Mix the oats, chopped nuts, brown sugar, cinnamon, and salt in a large mixing bowl.
  • Combine the honey, oil, and vanilla in a microwave-safe bowl and microwave for 30 seconds. Stir until the honey is completely dissolved into the vanilla and oil. (Stove-top directions: Combine the honey, oil, and vanilla in a small saucepan and heat on medium-high until the honey and oil completely combine.)
  • Pour the warm honey mixture onto the oats, nuts, and sugars and stir until the oats are fully coated in the honey.
  • Pour the prepared oats onto a large-rimmed baking sheet lined with parchment paper. Spread the granola into a thin, even layer.
  • Bake the granola at 325°F for 10 minutes, then gently stir and bake for another 10 minutes. Watch carefully as the granola bakes to prevent over-toasting and burning the oats.
  • Once the golden brown granola is toasted, remove it from the oven and let it completely cool. Then, break or crumble the homemade granola into pieces and store it in an airtight container. Enjoy on top of optioanl vanilla yogurt and fresh berries!
