Easy Crockpot Lasagna

Ingredients

  • 8 regular lasagna noodles uncooked

Meat Sauce

  • 1 pound ground beef
  • ½ medium yellow onion chopped
  • 1 teaspoon minced garlic
  • cups Prego traditional spaghetti sauce
  • ½ cup water

Cheese Mixture

  • cups shredded mozzarella cheese
  • 2 tablespoons grated parmensan cheese
  • 15 ounces ricotta cheese
  • 1 egg slightly beaten
  • 2 teaspoons oregano
  • black pepper to taste

Cheese Topping

  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese

Garnish

  • fresh parsely

Instructions

  • First, make the meat sauce. In a large skillet over medium heat, cook the beef with the chopped onion and minced garlic until the beef is no longer pink. Drain the grease. In a medium bowl mix together the browned beef with onions and garlic, spaghetti sauce, and water.
  • Next, make the cheese mixture. In a medium bowl combine the mozzarella, parmesan, and ricotta cheese, slightly scrambled egg, oregano, and black pepper.
  • Then make the cheese topping by combining the shredded mozzarella and parmesan cheeses. Set this bowl aside in the refrigerator.
  • Now lightly spray your crockpot with cooking spray and begin layering. Spread about 1.5 cups or so of the meat sauce to cover the bottom of the crockpot. Then add a layer of lasagna noodles, breaking up a noodle to fit the sides and curves. Then spread on a layer of the cheese mixture on top of the noodles. Repeat, meat sauce, lasagna noodles, and cheese mixture 3-4 times until you have used up all the ingredients.
  • Cook the lasagna on low for 3-4 hours. Occasionally check noodles for softness. You don't want overcooked mushy noodles!
  • Finally, add the cheese topping 15 minutes prior to the end of cooking. Once the cheese is melted, let the lasagna sit for 10-15 minutes to cool and settle. Garnish with a sprinkle of fresh parsley. Done!

Notes

If your lasagna begins to look soupy crack the lid to release moisture. Checking only so often takes a few seconds and can make a huge difference.
