This recipe is from a merge of several recipes. I wanted a lasagna recipe that was meaty, had a delicious cheese layer, and used uncooked regular lasagna noodles. And I didn’t want it to come out like a bowl of sloppy soup. This easy crockpot lasagna does all that. Plus, everyone loves it! Win!
Crockpot Lasagna recipe with Ricotta Cheese
Don’t let lasagna intimidate you ever again. This easy crockpot lasagna recipe is just making different sauces and mixtures and then layering them with lasagna noodles. Top it with more delicious cheese and done! Easy peasy!!
Ingredients for Crockpot Lasagna
- 8 regular lasagna noodles, uncooked
- Most lasagna noodles come in 16 ounce boxes or larger. That is more than enough noodles! I will get two meals or more out of each box.
Meat Sauce Ingredients
- 1 pound ground beef
- 1/2 medium yellow onion chopped
- 1 teaspoon minced garlic
- 3 1/2 cups Prego spaghetti sauce, 1/2 cup water
- We like Prego brand but use what you love. If your sauce is on the thinner side, do 4 cups sauce only and ommit water.
Cheese Mixture Ingredients
- 1 1/2 cups mozzarella cheese
- 2 tablespoons grated parmesan cheese
- 1-15 ounce container of ricotta cheese
- 1 egg, slightly scrambled
- 2 teaspoons oregano
- dash of black pepper to taste
Cheese Topping Ingredients
- 1/2 cup mozzarella cheese
- 1/4 cup shredded parmesan cheese
Garnish
- fresh parsley
Directions for Lazy Lasagna
First, make the meat sauce. In a large skillet over medium heat, cook the beef with the chopped onion and minced garlic until the beef is no longer pink. Drain the grease. In a medium bowl mix together the browned beef with onions and garlic, spaghetti sauce, and water.
Next, make the cheese mixture. In a medium bowl combine the mozzarella, parmesan, and ricotta cheese, slightly scrambled egg, oregano, and black pepper.
Then make the cheese topping by combining the shredded mozzarella and parmesan cheeses. Set this bowl aside in the refrigerator.
Now lightly spray your crockpot with cooking spray and begin layering. Spread about 1.5 cups or so of the meat sauce to cover the bottom of the crockpot. Then add a layer of lasagna noodles, breaking up a noodle to fit the sides and curves. Then spread on a layer of the cheese mixture on top of the noodles. Repeat, meat sauce, lasagna noodles, and cheese mixture 3-4 times until you have used up all the ingredients.
Cook the lasagna on low for 3-4 hours. Occasionally check noodles for softness. You don’t want overcooked mushy noodles!
Finally, add the cheese topping 15 minutes prior to the end of cooking. Once the cheese is melted, let the lasagna sit for 10-15 minutes to cool and settle. Garnish with a sprinkle of fresh parsley. Done!
