Ingredients

  • 1 pound lean ground beef
  • 2 teaspoons minced garlic
  • 1 medium onion diced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 23 ounces marniara 1 jar
  • 4 cups beef broth
  • 2 cups dry pasta broken bite-size lasagna noodles or rotini noodles
  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • 1 Tablespoon freshly chopped parsley

Instructions

  • In a stock pot, browned the ground beef with the minced garlic and onions until no longer pink.
  • Add the salt, pepper, Italian seasoning, marinara sauce, beef broth, and noodles. Stir and bring to a boil. Then, cover the pot with a lid and simmer for 20 minutes or until the noodles are cooked through.
  • Serve the warm soup with a dollop of ricotta cheese, shredded cheddar cheese, and a sprinkle of parsley. Enjoy!
