Frosted Zucchini Brownies

These Frosted Zucchini Brownies are a fun and easy way to make rich, homemade brownies topped with a simple one-minute frosting!

Ingredients

Zucchini Brownie Batter

  • ½ cup oil
  • 1½ cups sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • ½ cup unsweetened cocoa powdered
  • 2 teaspoons baking soda
  • 2 ½ cups grated(finely shredded) zucchini undrained

One-Minute Chocolate Frosting

  • ⅓ cup milk
  • ⅓ cup butter
  • 1½ cups sugar
  • 1 cup semi-sweet chocolate chips

Instructions

For the Zucchini Brownies

  • In a large bowl, combine the oil, sugar, egg, and vanilla.
  • In a medium bowl, whisk together the flour, cocoa powder, and baking soda. Add the flour mixture to the sugar mixture and stir well. It will appear dry.
  • Slowly stir in the zucchini.
  • Lightly spray a 9x13-in baking pan with cooking spray and evenly spread the brownie batter into the pan.
  • Bake the zucchini brownies in a preheated 350°F oven for 25-30 minutes.

For One-Minute Frosting

  • While the brownies cool, add the milk, butter, and sugar to a saucepan. Bring it to a boil over medium heat, stirring periodically.
  • Allow the sugar mixture to boil vigorously for 30 seconds. Then remove the pan from the heat and stir in the chocolate chips.
  • Once the icing is smooth, immediately pour it evenly over the brownies.
    Then let everything cool completely before cutting. Enjoy!
