How to Make Homemade Zucchini Brownies

With a handful of pantry ingredients and fresh zucchini, these homemade brownies come together quickly. Simply combine the wet ingredients, then the dry ingredients, add the zucchini, and bake! Chocolate Frosted Zucchini Brownies are a fun(and sweet) way to enjoy garden produce!

Ingredients for Easy Zucchini Brownies with Chocolate Frosting

For the Zucchini Brownie Batter:

  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 2 1/2 cups grated zucchini, undrained

For the One-Minute Chocolate Frosting:

  • 1/3 cup milk
  • 1/3 cup butter
  • 1 1/2 cups sugar
  • 1 cup chocolate chips

Instructions for Zucchini Brownies

First, in a large bowl, combine the oil, sugar, egg, and vanilla.

Then, in a medium bowl, whisk together the flour, cocoa powder, and baking soda. Add the flour mixture to the sugar mixture and stir well. It will appear dry.

Next, slowly stir in the zucchini.

Then, lightly spray a 9×13-in baking pan with cooking spray and evenly spread the brownie batter into the pan.

Bake the zucchini brownies in a preheated 350°F oven for 25-30 minutes.

Making the One Minute Frosting

While the brownies cool, add the milk, butter, and sugar in a saucepan. Bring it to a boil over medium heat, stirring periodically.

Allow the sugar mixture to boil vigorously for 30 seconds. Then remove the pan from the heat and stir in the chocolate chips.

Once the icing is smooth, immediately pour it evenly over the brownies.

Storing Homemade Brownies

Store these frosted zucchini brownies covered at room temperature or in the refrigerator. Because of the added moisture content from the zucchini, these brownies last 2-3 days at room temperature and 5-7 days in the refrigerator.
