1Tablespoonoilavocado
1pound potatoes, about 2 medium potatoesRusset, diced to under 1/2 inch
1pound lean ground beef
1½teaspoonsalt
½teaspoonpepper
1medium sweet oniondiced
1red bell pepperdiced
2teaspoonsminced garlic
1teaspoonsmoked paprika
1cupshredded cheddar cheese
2green onionschopped
Instructions
Heat up a large skillet(4-5Q skillet) over medium heat and add the oil.
Once the skillet is hot, evenly spread the diced potatoes in it. Let them cook undisturbed for about 3 minutes, or until they are nicely browned. Now stir the potatoes and cook them again undisturbed for another 3 minutes. At this point, they should be browned but not completely done.
Move the potatoes to one side of the skillet, then add the ground beef and diced onions to the other side. Season the beef with the salt and pepper. Then brown the ground beef until it is no longer pink, breaking it into a crumble as it cooks. It's ok if some of the beef mixes with the potatoes, but try to keep them mostly separate. If needed, after the beef is browned, spoon off the excess grease.
Once the beef is browned, mix the beef and potatoes and season them with the bell pepper, paprika, and garlic. Stir and let everything cook until the potatoes are fork-tender and the pepper is softened, about 3-5 mins.
After everything is cooked, remove the skillet from the heat. Then add the cheese on top and let it melt. Finally, garnish with the diced green onions and other desired toppings. Serve warm. Enjoy!
