Ingredients
1tablespoon olive oil
1small-medium onion chopped
1teaspoonminced garlic
2teaspoons garlic powder
1poundground beefsausage or turkey
2cupfrozen peas and carrots(or any frozen vegtables)12 ounce bag works
1cup chopped celery
2cupscooked rice
4large eggslightly beaten
½-1cupsoy sauce or aminos We prefer coconut aminos.

Instructions
In a large skillet/braiser or wok, add oil, minced garlic, garlic powder, and ground beef—brown beef on medium heat until no longer pink.
Stir in the frozen peas and carrots, and celery. Cook for 5 minutes. Then stir in the cooked rice.
Clear a circle in the center of the skillet, pour in the beaten eggs, and scramble slowly, incorporating the other ingredients. Do not be afraid to take your time.
Cook on low until all vegetables are tender. Then add the soy sauce or aminos. Sprinkle with salt and pepper to taste. Finally, heat through and serve warm. Enjoy!
