Browned ground beef, rice, and egg, all cooked with peas, carrots, and celery and coated in soy sauce or coconut aminos is this delicious Ground Beef Fried Rice recipe. Warm, filling, and full of the foods we already love, this easy main gives us all the comfort food vibes in a healthy alternative.

Ingredients

  • 1 tablespoon olive oil
  • 1 small-medium onion chopped
  • 1 teaspoon minced garlic
  • 2 teaspoons garlic powder
  • 1 pound ground beef sausage or turkey
  • 2 cup frozen peas and carrots(or any frozen vegtables) 12 ounce bag works
  • 1 cup chopped celery
  • 2 cups cooked rice
  • 4 large eggs lightly beaten
  • ½-1 cup soy sauce or aminos We prefer coconut aminos.
  • salt and pepper to taste

Instructions

  • In a large skillet/braiser or wok, add oil, minced garlic, garlic powder, and ground beef—brown beef on medium heat until no longer pink.
  • Stir in the frozen peas and carrots, and celery. Cook for 5 minutes. Then stir in the cooked rice.
  • Clear a circle in the center of the skillet, pour in the beaten eggs, and scramble slowly, incorporating the other ingredients. Do not be afraid to take your time.
  • Cook on low until all vegetables are tender. Then add the soy sauce or aminos. Sprinkle with salt and pepper to taste. Finally, heat through and serve warm. Enjoy!
