Ingredients
- 1 tablespoon olive oil
- 1 small-medium onion, chopped
- 1 teaspoon minced garlic
- 2 teaspoons garlic powder
- 1 pound lean ground beef
- Your ground meat must be lean, as you will not be draining off the drippings or grease. 92% lean or higher.
- 2 cups or 12 ounces of frozen peas and carrots
- 1 cup chopped celery
- 2 cups cooked rice
- 4 large eggs, lightly beaten
- 1/2 -1 cup soy sauce or coconut aminos
- salt and pepper to taste
Directions
First, in a large skillet/braiser or wok, add oil, minced garlic, garlic powder, and ground beef- brown beef on medium heat until no longer pink.
Then stir in the frozen peas and carrots, and celery. Cook for 5 minutes. Then stir in the cooked rice.
Now clear a circle in the center, pour in the beaten eggs, and scramble slowly, incorporating the other ingredients. Do not be afraid to take your time.
Cook on low until all vegetables are tender. Then add the soy sauce or aminos. Sprinkle with salt and pepper to taste. Finally, heat through and serve warm. Enjoy!
Tips and Substitutions for Classic Beef Fried Rice
Olive Oil: Substitute it for coconut oil or any other cooking oil.
Ground Beef: Substitute it for ground sausage(try different flavors for a different taste.) or ground turkey. Try to buy ground meats on sale in bulk, separate into 1-2 pound packages, and re-freeze them for cheaper meals throughout the year.
Frozen Peas and Carrots: While you can substitute frozen carrots for fresh chopped carrots, I would stick to frozen peas. Frozen peas will cook at the same rate as fresh carrots and celery. Fresh will turn to smush.
In a pinch, our family will use 3 cups of frozen mixed vegetables instead of peas, carrots, and celery. It saves some time in prep, and it was what we had stocked in our freezer. This also makes it a budget-friendly meal you can enjoy all year long.
Cooked Rice: Here’s a quick tip: Cook minute rice in the microwave when the ground beef is browning, and it will be done just in time to add to the dish. This is the perfect use for leftover rice too.
Soy sauce: Substitute soy sauce for coconut aminos or other favorite aminos. Start with a 1/2 cup and then add to taste. Half my family loves the traditional flavor of original soy sauce, and half like the coconut aminos. I prefer the coconut aminos for their sweeter and lighter flavor that’s more gentle on my stomach. Plus, coconut aminos are soy-free, gluten-free, and have less sodium than traditional soy sauce.
