Hamburger Soup with Frozen Vegetables

Ingredients

  • 1 pound ground beef
  • ¼ cup yellow onion diced
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 2 cups potatoes peeled and cubed into ½-inch cubes
  • 29 ounces beef broth 2-14.5 oz cans
  • 10 ounces tomato soup 1 can
  • 15 ounces petite diced tomatoes 1 can, do not drain
  • 16 ounces frozen vegetables 1 bag
  • 2 tablespoons sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil
  • salt and pepper to taste when simmering

Instructions

  • First, in a large stockpot, brown the ground beef, onions, minced garlic, and salt until the beef is until no longer pink. Crumble the beef as you go by breaking it up with a spatula. Then drain the grease.
  • Next, add the cubed potatoes, beef broth, tomato soup, diced tomatoes, frozen vegetables, sugar, Worcestershire sauce, and the dried parsley and basil. Stir to combine and bring the soup to a boil. Once boiling, reduce heat to a simmer. Then simmer for 20-30 minutes to incorporate the flavors and cook the potatoes. Stir occasionally.
  • After the simmer, taste and add any additional salt and pepper. Done!
    Serve this hamburger soup with frozen vegetables with side of buttered bread, garlic toast, or grilled cheese. We personally just crush a couple of Town House crackers on top and call it good. Enjoy!
