Ingredients
1cupflour
¼cuppowdered sugar
½cupbutter(1 stick)melted
2eggs
1cupsugar
3tablespoonslemon juice
2tablespoonsflour
½teaspoonbaking soda
Instructions
Preheat oven to 350°F.
Combine the melted butter, powdered sugar, and 1 cup flour together. Press into a 9-inch pie pan using the back of a spoon or your fingers. Make sure to have sides and bottom to pie crust.
Bake 10-15 minutes or just until the bottom rises and is starting to brown a bit.
Prepare the filling while the crust is baking by whisking the eggs, sugar, lemon juice, two tablespoons flour, and baking powder together in a separate bowl.
Add the filling to the crust immediately and return to the oven baking the pie for an additional 15-20 minutes.
Cool for at least 10 mins and sprinkle with powdered sugar. Enjoy!
