Peanut Butter Cup Brownie Bites

Easy and delicious, this Peanut Butter Brownie Bites recipe takes a box brownie mix and Reese's peanut butter cups for a bite-size treat that everyone can enjoy!!

Ingredients

  • 18.7 ounces box brownie mix or around that 'family size' box
  • eggs per box instructions
  • vegetable oil per box instructions
  • water per box instructions
  • 44 Reese's miniature peanut butter cups

Instructions

  • In a large mixing bowl, mix the brownie mix, eggs, oil, and water as directed on the box.
  • Line a mini muffin tin with mini cupcake liners, or grease it with cooking spray. Fill each muffin well about 2/3 full with brownie batter. This is just over 1 Tablespoon of batter. (I generously scooped the batter with a 1-tablespoon cookie scoop.)
  • Bake the brownie bites in an oven preheated to 350°F until a toothpick inserted into the center comes out clean. Start checking around 10 minutes. Bake time will be shorter for a dark metal pan and longer(around 15 minutes) for silicone pans.
    Unwrap the peanut butter cups while the brownie bites bake.
  • Remove the brownie bites from the oven once baked and immediately press the peanut butter cups in the center of each one, pressing down until the cups are level with the top of the brownie.
  • Allow the peanut butter brownie bites to cool completely(around 2 hours) before removing them from the tin. Enjoy!
