Using a boxed brownie mix really makes for an easy brownie bite recipe. You will mix the brownie batter according to the directions on your box. Then it’s bake, insert the peanut butter cups, cool, and enjoy!

Ingredients for Brownie Bites with Peanut Butter Cups Inside
- 18.7-ounce box brownie mix
- I use a family-size brownie mix, around 18 ounces.
- eggs, per box instructions
- vegetable oil, per box instructions
- water, per box instructions
- 30-46 Reese’s miniature peanut butter cups
- The amount of peanut butter used will vary depending on how much batter you put into each muffin tin.

Instructions for Peanut Butter Cup Brownie Bites
First, in a large mixing bowl, mix the brownie mix, eggs, oil, and water as directed on the box.


Then line a mini muffin tin with mini cupcake liners, or grease it with cooking spray. Fill each muffin well about 2/3 full with brownie batter. This is just over 1 Tablespoon of batter. (I generously scooped the batter with a 1-tablespoon cookie scoop.)



Next, bake the brownie bites in an oven preheated to 350°F until a toothpick inserted into the center comes out clean. Start checking around 10 minutes. Bake time will be shorter for a dark metal pan and longer(around 15 minutes) for silicone pans.
Unwrap the peanut butter cups while the brownie bites bake.
Then remove the brownie bites from the oven once baked, and immediately press the peanut butter cups into the center of each, pressing down until the cups are level with the top of the brownie.


Finally, allow the peanut butter brownie bites to cool completely(around 2 hours) before removing them from the tin. Enjoy!

For an even easier peanut butter cup brownie bite, purchase a bag of already unwrapped cups at stores like Aldi. I have a handful of children who love to help unwrap candy in the unfortunate event that one might need to be sampled.
We love cupcake liners! Mini cupcake liners save you from messy muffin tins, make the perfect wrapped individualized treat for school and the office, and tend to make a few more bites than if you just scooped the batter into a greased well.
Oven-bake times vary, so make sure to check with a toothpick!
For faster cooling, leave them on the counter for 20 minutes, then transfer them to the refrigerator until completely cooled.

This is a treat that stores well. Store these brownie bites at room temperature in an airtight container on the counter for up to 5 days. (If they last that long!) Or freeze them for a cool and quick chocolate-peanut butter treat for up to 3 months. Be careful not to leave them in the heat for too long, as the centers may melt (not always a bad thing).
