Ingredients
Crust
2cupsflour
⅓cupsugar
¼teaspoon salt
⅔cupbutter(10 2/3 Tablespoons)cold
Filling
4large eggs
1cuplight corn syrup
½cupsugar
½cuplight brown sugar
2Tablespoonsbuttermelted, but not hot
1teaspoonvanilla extract
1⅔cupspecanschopped
Instructions
Make the Crust while Oven Preheats
Spray a 9x13-inch baking dish with cooking spray or line it with parchment paper and spray that with cooking spray. Preheat the oven to 350°F.
Add the flour, 1/3 cup of sugar, salt, and chunked cold butter to a food processor and on pluase mode, blend until you have a fine crumble. OR You can add the crust ingredients to a large bowl and cut in the butter using a pastry cutter, two knives, or clean hands. Continue to break down the butter into small pieces until the mixture is a fine crumble.
Sprinkle the crust mixture in the greased baking dish and evenly press firmly down until a crust forms. Bake the crust at 350°F for 20 minutes.
Make the Filling while Crust Bakes
In a large bowl, add the remaining ingredients: eggs, corn syrup, 1/2 cup of sugar, brown sugar, melted butter, vanilla extract, and chopped pecans. Stir with a fork until evenly mixed. Pour the filling evenly over the baked crust as soon as it comes out of the oven.
Bake the pecan pie bars for 25-30 minutes or until set. They are cooked through and set when the middle no longer jiggles.Finally, cool the bars completely on a wire rack, cut them into squares, serve, and enjoy!
