Pumkpin Bars with Cream Cheese Icing

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powdered
  • 1 teaspoon salt
  • teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 cup brown sugar light or dark
  • cup sugar
  • 2 Tablespoons pure maple syrup
  • 15 ounces canned pumpkin puree 1 can
  • teaspoons vanilla extract

Cream Cheese Icing

  • 8 ounces cream cheese 1 block, softened at room temperature
  • ¼ cup salted butter softened at room temperature
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • sprinkles for decorating

Instructions

  • Preheat the oven to 350°F and lightly spray a 10x15 in baking sheet with cooking oil.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  • In a medium bowl, whisk or blend together the oil, eggs, brown sugar, sugar, maple syrup, pumpkin, and vanilla. Pour the wet ingredients into the dry and mix until fully combined, scraping the bottom and sides as needed.
  • Spread the batter in an even layer on the prepared baking sheet. Bake for 28-35 minutes. The pumpkin bars are done when an inserted toothpick comes out clean.
  • Remove the baked bars from the oven and let them cool completely!

Making the Cream Cheese Icing

  • Once the bars have cooled completely, beat the cream cheese and butter until smooth and creamy in a stand mixer or medium bowl with an electric mixer.
  • Add the powdered sugar, vanilla, pumpkin pie spice, and salt. Mix this on low for about 30 seconds and then on high until smooth.
  • Spread the icing on the cooled pumpkin bars and add sprinkles! *To set the icing and for easier cutting, place bars in the refrigerator for at least 30 minutes before slicing. Serve and enjoy!
    Store leftover bars covered in the refrigerator for up to 5 days.
