Ingredients
¼cupbutter
8 cupszucchini cubed or sliced
1large onion sliced
2-3 med-large tomatoescubed
6slices cooked bacon
¼cup water
½cup plain bread crumbs
1teaspoon soy sauce
1cupshredded cheddar cheese
½cup grated parmesan cheese
salt and pepper to taste
Instructions
In a large 5-quart skillet, melt the butter over medium heat. Mix in the prepared zucchini, tomatoes, onions, and bacon. Season with salt and pepper and add in water. Stir. Cover and return to heat. Cook for 10 minutes, occasionally stirring until vegetables are tender.
Gently mix in the bread crumbs, soy sauce, and cheeses. Cover and allow the cheese to melt. Serve warm, and enjoy!
