  • ¼ cup chopped yellow onion
  • ¾ cup ketchup
  • 3 tablespoons packed light brown sugar
  • 1 cup canned corn drained
  • 2 cups shredded cheddar cheese
  • 32 ounces frozen tater tots 1 bag

Instructions

  • First, make the sloppy joe. In a skillet over medium heat, brown the ground beef with the chopped yellow onion until it's no longer pink. Drain off the grease. Then add in the ketchup and brown sugar and mix well. Next, mix in the corn and one cup of shredded cheddar cheese.
  • Then, in a lightly greased 9x13-inch baking dish, evenly spread the sloppy joe out across the entire bottom. Then sprinkle on the remaining shredded cheddar cheese and top with a single layer of tater tots.
  • Bake this tater tot casserole at 400°F for 35-40 mins until the tater tots are golden brown and crispy. Carefully broil for 3-4 minutes for extra crunchy tater tots. Serve warm and enjoy!

Notes

Remember this casserole can be easily customized to fit your family's needs and likes so feel free to experiment. Use your favorite sloppy joe recipe, add more, less, and a different type of cheese, or switch out the vegetable. The options are endless but here are some ideas to start.
Got a household of meat-eaters? Beef it up! Make this casserole more hearty by doubling the sloppy joes portion of this recipe.
Want to make it even easier? Lover of Manwich? Simply brown your beef and then add a can of Manwich, the original sloppy joe sauce, per pound of ground beef!
Not a fan of corn? You could omit it entirely or substitute it for green beans or black beans for more protein!
