Tater Tot Casserole with Sloppy Joe and Corn
Ingredients
If you are into semi-meal planning like me, I will let you in on a little secret: I often make this casserole from leftovers. To save time I make a double batch of Sloppy Joes and serve it up with corn so on busy nights or the weekend I will use the leftovers from that meal in this super tasty sloppy joe tater tot casserole. This stretches the meat and corn into two meals with minimal prep! Win!
- 1 pound of ground beef
- 1/4 cup chopped yellow onion
- 3/4 cup ketchup
- 3 packed tablespoons of light brown sugar
- 1 cup of canned corn
- 2 cups of shredded cheddar cheese
- 32-ounce bag of tater tots
Directions
First, make the sloppy joe. In a skillet over medium heat, brown the ground beef with the chopped yellow onion until it’s no longer pink. Drain off the grease. Then add in the ketchup and brown sugar and mix well. Next, mix in the corn and one cup of shredded cheddar cheese.
Then, in a lightly greased 9×13-inch baking dish, evenly spread out the meat mixture across the entire bottom. Then sprinkle on the remaining shredded cheddar cheese and top with a single layer of tater tots.
Bake this tater tot casserole at 400°F for 35-40 mins until the tater tots are golden brown and crispy. Carefully broil for 3-4 minutes for extra crunchy tater tots. Serve warm and enjoy!
