This Lemon Poppy Seed Bread recipe leaves you with a refreshing and light lemon-flavored bread that’s perfectly sweet. Plus it’s a quick and easy option for a brunch date or extra lunch side.

As a lemon-lover, I give this recipe 4.5 out of 5 stars. My family devoured the bread however I wish there was a bit more lemon flavor so I personally might add an extra bit of lemon extract next time. Have no fear though, this is still a great lemon poppy seed bread recipe!

How to make Lemon Poppy Seed Bread

You will need two medium bowls and two bread loaf pans. Lightly spray the loaf pans with cooking spray and flour them by sprinkling flour on the grease and shifting it around until there’s a uniformed light coating cover the bottom and three-quaters up the sides.

Gather your ingredients and separate them into wet and dry ingredients. In one medium bowl, combine the dry ingredients. This is the flour, poppy seeds, and baking powder. In the other bowl, combine the wet ingredients. This would be the beaten eggs, milk, oil, lemon and vanilla extract and the sugar.

Once you have the two parts, take the dry ingredients and slowly incorporate it into the wet. Do not over mix. Over mixing bread batter can create a tough and super dense bread once baked.

Lastly, pour the batter into the prepared loaf pans. I did you two loaf pans because I like a shorter loaf and it keeps the loaf baking evenly however you can use just one pan. Bake the bread at 350 degrees Fahreneit for 50-60 minutes or until a toothpick when inserted in the middle of the loaf comes out clean. Done! A super yummy bread to bring to your next brunch, lunch or mid-day snack time.

Ingredients
  

Wet Ingridents

  • 3 eggs beaten
  • 1¼ cups milk
  • ¾ cup oil
  • 2 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 1¼ cups sugar

Dry Ingredients

  • 2¼ cups flour
  • 2 tablespoons poppy seeds
  • 1 tablespoon baking powder

Instructions
 

  • Combine the dry ingredients (flour, seeds, and baking powder) in a bowl and set aside.
  • In a sperate bowl, mix the wet ingridients (eggs, milk, oil, extracts, and sugar) together.
  • Gradually mix the dry ingredients into the wet ingredients. Do not overmix.
  • Pour into a greased and floured loaf pan. (I used TWO loaf pans for this recipe.)
  • Bake at 350°F for 50-60 minutes or until a toothpick comes out clean when inserted into the middle of the loaf. Enjoy!
