This delicious and savory Creamy Parmesan Italian Sausage Soup recipe features cooked Italian sausage with onions and garlic in a tomato-based soup with Ditalini noodles. The soup is then enriched with cream cheese, heavy whipping cream, and melted parmesan cheese and topped with fresh parsley. It’s full of zesty Italian flavor, hearty, and the perfect soup for cold months!

It was a joy to find this Creamy Parmesan Italian Sausage Soup recipe. It’s simple to cook, has all my favorites, and it’s a totally delicious soup! From start to finish, this is a 30-minute one-pot meal idea that will wow your family. Use your favorite Italian sausage to control the flavor palette and please your family. We like mild Italian sausage because it tends to be kid-friendly for younger taste buds. The thick and creamy broth from the cream cheese, whipping cream, and melted parmesan cheese elevate this soup. Lastly, we love a bit of pasta in soup, and the Ditalini noodles are a fun and filling part of this great Italian soup recipe!

How to Make Creamy Parmesan Italian Sausage Soup with Ditalini Noodles

Did I mention this is a one-pot meal idea? That’s my favorite part—there are hardly any dishes! The flavor can’t be beat, either. It’s rich, creamy, zesty, and fresh, all while being a warm and filling pasta dish. This soup with Italian sausage and ditalini noodles is hard to beat!

Ingredients for Creamy Parmesan Italian Sausage Soup

  • 1 pound Italian sausage, if needed, casings removed
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 4 cups chicken broth
  • 14.5 ounces petite diced tomatoes, 1 can
  • 8 ounces ditalini pasta or other small pasta
  • 1 teaspoon Italian seasoning
  • 4 ounces cream cheese, slightly warmed
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup heavy whipping cream
  • 1 Tablespoon fresh parsley, chopped
  • salt and pepper to taste

Ingredients to Creamy Parmesan Italian Sausage Soup.

Instructions for Creamy Parmesan Italian Sausage Soup

First, in a stock pot, cook the Italian sausage and onion until it is no longer pink. Remember to break the sausage apart as it cooks. Drain off any excess grease.

Then add the garlic and cook for about one minute. Next, add the chicken broth, diced tomatoes, pasta, and Italian seasoning. Bring the soup to a boil and then simmer for about 6-8 minutes until the pasta is cooked al dente.

Next, turn the heat low and mix in the slightly warmed cream cheese, grated parmesan cheese, and whipping cream until completely melted and dissolved. Add salt and pepper to taste. Finally, garnish with a Tablespoon of fresh parsley. Enjoy!

Last step add the freshly chopped parsley.

Note: The longer the pasta sits, the more it absorbs the broth, which doesn’t affect the taste.

Options:

  • Add Russet potatoes in place of the ditalini noodles. Boil the potatoes until easily pierced with a fork.
  • When boiling the pasta, add extra vegetables like diced celery and carrots.
  • At the end, add a handful or two of fresh spinach and cook until wilted.
  • For extra spice, add ½ teaspoon red pepper flakes.
  • Remove the pasta and then remove 1 cup of broth as well.

Storing Creamy Parmesan Italian Sauage Soup

Store this Creamy Italian Sausage Soup in an airtight container in the refrigerator for 3 or 4 days. The longer it sits, the more the noodles will absorb the broth. To thin, add more broth or water.

    This was really good. The only thing I changed/added was 2 cups fresh spinach and 1t red pepper flakes. Other than that this soup was really yummy . It didn’t take long to prepare and it came together without a hitch. Thanks

    This soup checks all the boxes for putting together a simple but flavorful dish in less than an hour. However, the ratio of liquid to pasta resulted in a very thick casserole-like rather than a soup-like consistency. I am going to keep this in my recipe box with a note to use half the pasta or less, as my family likes to enjoy a lighter soup that leaves room for a nice crusty bread or a sandwich. Thanks.

    What can I substitute the tomatoes with? My children love crushed tomatoes but not diced tomatoes.

    This was one of the best soups I’ve ever made! I added carrots, celery, corn and crushed red pepper and it was excellent! We reheated it for lunch today and it was as good, if not better, after sitting and melding all the flavors!
